To achieve this, ICC Sydney’s culinary team has developed a unique ‘Feeding Your Performance’ philosophy, delivering ‘smart’ dishes which drive physical and mental stamina.
“Our menus are high in protein and low in saturated fats to help deliver maintained focus and steady energy. We have also focussed on fresh, seasonal fruits, vegetables and whole grains to increase the ratio of plant proteins, which in turn improves digestion and concentration,” explained Tony Panetta, Executive Chef at ICC Sydney.
“The hallmarks of great meals are balance, quality, freshness and taste – and this all comes down to the ingredients you use. Fortunately, Sydney has access to incredible produce, including heritage varieties that are bursting with flavour and nutrition.

“Across our menus, we hero this home grown produce and we are committed to working with local artisans, like Paesanella Cheese Manufacturers in Marrickville and Blue Mountains company Herbs of Life, to create quintessential Sydney cuisine.”
In more great news for regional producers, the venue’s wine collection also champions local talent, with 80 per cent of the labels available hailing from New South Wales.
“Our approach means we can support regional businesses and ensure all guests get a taste of the best food and drink this fruitful region has to offer,” Panetta concluded.
